*biscotti by request

A few years ago I went on a crazy baking spree right before traveling to Georgia to visit my family and ended up taking the vast amount of biscotti with us.  My youngest sister really enjoyed them and they left a huge impression on her. Many times over the last year or so she has asked me, in jest to send her some biscotti.  This past week when talking to her, she had a request.  A serious request.  So today I spent time in the kitchen cranking out tasty biscotti to send to my baby sister. (I would do most anything for her). 

Biscotti are so very easy to make.  I simply used several recipes from www.allrecipes.com   I have made the Gingerbread Biscotti, Double Chocolate Biscotti, and Basic Biscotti.  For the Double Chocolate Biscotti I melted chocolate and added several teaspoons of instant coffee to the melted chocolate for the coffee lover in me!  Then you simply dip the bottom of the biscotti in the chocolate. The possibilities are endless really.  The Gingerbread Biscotti has been dipped in white chocolate and topped off with fresh ground cinnamon - yum.  For the Basic Biscotti, I added white chocolate and topped it with chopped honey glazed almonds.  You could use the basic recipe and add lemon zest or orange zest to the recipe for a citrus twist.  As I said before, the possibilities are endless.

  2. Whoa, that looks good! I'm thinking the gingerbread would be good dipped in lemon curd too. I've never really thought of making biscotti. I might give it a whirl!

  3. Vanilla........that reminds me. I need to start a new bottle of that homemade vanilla we made several years ago. We need to sop for some vanilla beans!
