*doughnuts anyone?

It is past the crazed baking time for most, but not me. I baked a beautiful cake a few days ago, it didn't taste so good because I was supposed to add butter flavoring, which I thought for sure I picked up at the grocer. But NO! I added banana flavoring.. YUCK!  The cake turned out beautiful but had a banana flavor to it, which wasn't to my liking nor to Eric or Henry.  Last night I was sorting through some recipes I had recently clipped.  I decided that today I would make the "Sunny Morning Doughnuts" recipe which I found in the April/May 2009 Taste of Home magazine.    These were fun, OK not really, they were a mess to make but I am a messy cook.. so that about explains the mess.

Sunny Morning Doughnuts

4 1/2 to 5 cups all-purpose flour
1 1/4 cup sugar
4 tsp baking powder
1 tsp salt
3 eggs beaten
1 cup milk
1/4 cup oil
2 Tbsp orange juice
4 tsp grated orange peel (or omit if you want plain)
Oil for deep frying
Confectioner's sugar

In a large bowl, combine 4 1/2 cups flour, sugar, baking powder and salt.  Combine the eggs, milk, orange juice, oil and orange zest, stir in dry ingredients just until moistened.  Stir in enough remaining flour to form a soft dough ball.  Cover and refrigerate for at least an hour.

Turn onto a floured surface; roll to 1/2 inch thickness or thereabouts.  Cut with a floured doughnut cutter or a biscuit cutter which is what I did. Then I used a small bottle to punch out the center.  In your skillet, drop the doughnut in, do not crowd, cook til golden brown (this will happen quickly) turn over and fry til golden brown on both sides. I also cooked the 'holes'. Drain on paper towels, then roll in or dust with confectioners sugar.
